French Toast with goat cheese & tomato relish

Judith from @judiliciousandnutritious created this recipe for us and we can assure you: Cheese and happy maple syrup complement each other wonderfully. Tomatoe relish as a spread on a crunchy French Toast topped with whipped goat cheese. Both the relish and the toast are prepared with our Goût Robuste, the most flavorful syrup in the happy maple range with distinct caramel and maple notes. You can serve this as an appetizer or as a side dish or just enjoy it as a little snack.

French Toast with goat cheese & maple syrup

Ingredients for 4 toasts

For the tomato relish:

  • 300g yellow cherry tomatoes*

  • 200g polpa di pomodoro (yellow tomatoes)*

  • 1 small yellow onion

  • 2 cloves of garlic, finely chopped

  • 1 tbsp olive oil

  • 1 tbsp white wine vinegar

  • 2 tbsp happy maple Goût Robuste (our caramel taste)

*you can also use regular cherry tomatoes and bottled/canned finely chopped tomatoes

For the French Toast:

  • 4 thick slices sourdough bread

  • 2 eggs

  • splash of oat milk

  • 1 tbsp happy maple syrup Goût Robuste (our caramel taste)

  • salt

  • pepper

  • 1/2 tsp dried oregano

  • olive oil or butter to fry

For the herbed goat cheese:

  • 150g goat cream cheese

  • pinch of salt

  • black pepper

  • 1/2 tsp dried thyme

To serve:

  • happy maple syrup Goût Robuste (our caramel taste)

  • fresh cress

  • black pepper

How to

  1. Peel and finely chop the onion and garlic cloves. Fry them in a bit of olive oil until they become fragrant and translucent. Deglaze with white wine vinegar and pour in the maple syrup. Allow the mixture to caramelize slightly and stir occasionally. Wash and roughly chop the cherry tomatoes and add them in along with the polpa di pomodoro. Season with salt and pepper and allow to simmer for 20 - 30 minutes until the consistency thickens, then set aside.

  2. Transfer the goat cheese to a bowl and add in a pinch of salt, dried thyme and freshly cracked black pepper. Whip until all is well combined and creamy, you should have a relatively thick spread.

  3. Beat the eggs, oat milk and maple syrup in a shallow bowl, then season with salt, pepper and oregano. Heat some olive oil or butter in a frying pan. Soak the bread in the egg mixture and fry from both sides until golden brown. Repeat until all ingredients are used up.

  4. To assemble your French Toasts, stack two slices on a plate and generously spread with tomato relish. Place a dollop of the whipped goat cheese on top, then drizzle with some maple syrup and serve with fresh cress and black pepper.
