How can I replace sugar with happy maple?

Our three variations Délicat, Riche and Robuste make it possible to use happy maple for both sweet and savory dishes. The syrup can be used raw or cooked. There is a simple rule of thumb to replace conventional sugar: 1 cup of sugar equals 2/3 cup of maple syrup while reducing other liquid by 1/4 cup.
