Maple-Roasted Carrots


  • 1 kg of carrots, cuz into slides

  • 6 tbs butter or neutral oil

  • 2/3 cups happy maple syrup goût riche

  • 3/4 tsp chili flakes

  • sea salt


  • Preheat oven to 200°C. Line a rimmed baking sheet with 3 sheets of foil. Cut carrots on a diagonal into pieces (halved or quartered lengthwise if large)

  • Spread out carrots on foil. Evenly top with butter, maple syrup, and chili flakes. Season with sea salt and toss to combine.

  • Bake carrots, tossing every 20 minutes, until tender and browned around the edges, about 50 minutes. Transfer to a platter (with syrup, if desired). Sprinkle with sea salt (if using).
