Spicy Maple Tofu

Lightly sautéed tofu tossed in a spicy maple sauce and served over fresh veggies – a flavourful, delicious and healthy dish!
1 tsp of sambal oelek
2 tsp of soy sauce
1 tsp of Happy Maple Goût Riche
Cut the tofu into dice
Mix the liquid ingredients well together
Heat up some oil in a pan and fry the tofu until slightly brown
Add the sauce mix, turn down the heat and stir well until most oft the liquid is soaked up and the tofu dice coated
Remove from the stove and enjoy with a bowl, some Asian noodle dishes, in a salad…
For some inspiration - soba noodle/rice bowl (for 2 persons):
First the dressing:
Chop finely a 3 cm piece of ginger and one clove of garlic.
Heat up 1 tsp of neutral oil and 2 tsp of roasted sesame oil in a pan, add the ginger and garlic, stir well.
Add 3-4 teaspoons of Happy Maple Goût Riche and 8-9 teaspoons of soy sauce.
Stir and let thicken on low heat for a couple of minutes. Set aside.
When cooled down, add 1 tsp of sesame seeds, the zest of one lime and the juice of ½ a lime.
Roast 2 handful of peanuts in a pan. When slightly browned, add 2 tsp of a neutral oil and 2 tsp of hot chili flakes. Let cool down.
Cook some soba noodles or basmati rice as indicated on the package. When done, put half of them in a bowl (share the rest is for your guest, partner…). Add veggies of your choice and arrange them nicely around the noodles. I used julienned (thinly sliced) carrots, fresh baby spinach, steamed edamames, some chopped mint leaves and lots of cilantro. You can also take steamed pak choi or broccoli… Add the tofu, the spicy nuts and sprinkle with your dressing. Enjoy!
