Butterless apple cake

Our dear Yasmina from "Yasmina and the food" created this delicious cake recipe for us. We have collaborated with Yasmina in the past for our Yoga Sunday events and she just knows how to make the yummiest yet healthy food. This cake is loaded with apples and topped with walnuts. No sugar and butter! And with that, it's absolutely fine to treat yourself to a piece of cake not only for afternoon coffee, but also already for breakfast, lunch, in between....

Butterless Apple Cake

Ingredients

  • 1 1/2 cup wholewheat flour (can be replaced by gluten free flour)

  • 1 cup almond powder

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 2 tsp cinnamon

  • 4 apples, grated

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 cup yogurt of choice

  • 1 to 2 tbsp happy maple, Goût Robuste

  • 3/4 cup walnuts

How to

  1. Preheat oven at 180°C.

  2. In a big bowl mix (by hand or with an electric mixer) liquid ingredients starting by eggs and maple syrup.

  3. In a different bowl sift dry ingredients, then add to the wet mix. Mix thoroughly.

  4. Add grated apples and walnuts. Mix some more. You can add extra walnuts to the surface of the cake.

  5. Pour the mix into mould of choice lined with parchment paper.

  6. Bake for 40 minutes. Let cool before cutting.
